These savory caramelized onions are sauteed in a healthy oil instead of butter. Cooked onions can enhance meat, chicken or fish dishes with their sweet, browned flavor.

Ingredients

    • 4 Spanish onions, peeled and halved
    • 1 tsp safflower or grapeseed oil
    • 1 sprig of fresh thyme or 1 tsp dried thyme
    • 1/8 tsp salt

Preparation

    • With the tip of a sharp knife, remove the core of onions. Slice onion halves thinly. In a large skillet, heat oil over medium-high heat until hot. Add onion slices and season with thyme and salt. With a wooden spoon or a pair of tongs, stir to combine.
    • Let onions cook to render their liquid. When most of the liquid has evaporated and onions begin to brown, stir. Reduce temperature to medium-low, and cook until onions are soft and nicely browned. Monitor the heat so onions continue to brown but not burn, reducing heat as needed. The longer onions cook, the deeper the flavor.
    • Remove from skillet and serve warm or let cool.
